Vegan Chocolate Chip Cookies (that nobody else will notice are vegan.)

Bright Light Vegan, Sophie Gough, is in her first year of medical school at UIC.

I am so proud of my daughter, Sophie Gough, and the miraculous vegan endeavors she shares with the world on her Instagram page “Bright Light Vegan.” Sophie is in her first year of medical school, and enjoys sharing her passion for vegan cooking and baking with others. Her commitment to peaceful inner strength and love resonates through all that she does.

Sophie also shares her love of yoga, running, and meditating with the world on her Bright Light Vegan Instagram page. She inspired my husband Peter to become vegan when his cholesterol was high. Within months of committing to his new plant-based whole foods diet, Peter’s cholesterol completely dropped to very low, healthy numbers. I think she deserves a spot on Wednesday’s Wonderful Women for steering her dad away from a potential health crisis cliff!

Although I am not as stringent with my diet as Peter and Sophie are, I am about 90% plant-based, and find that this ‘recipe’ suits my body type. The biggest thing I notice is the elimination of dairy in my diet, and this has completely transformed me so that I don’t suffer from sinus congestion, allergies & asthma very much at all anymore.

It’s nice to know that when I want to treat myself to something sweet and chocolatey, I won’t be suffering from sinus headaches and mucus buildup which happens after I eat dairy butter.

I also love watching Sophie’s Bright Light Vegan page for inspiration on yoga, running and meditation! Sophie is running her first marathon this spring, at her Alma Mater, University of Illinois at Champaign Urbana. Champaign will always have a special place in Sophie’s heart, and we are excited to watch her run 26 miles! She has trained throughout the Polar Vortex of 2019.

We are lucky to have Sophie close to us in the great city of Chicago at UIC medical school. She often brings us home these chocolate chip cookies, and lots of other baked vegan treats that she invents, and people don’t even realize they are vegan! They just know they taste delicious.

I hope you will love exploring the ease of baking without eggs or butter. It’s so nice to have all ingredients like ground flaxseed, Earth Balance vegan butter, and a carton of almond/soy milk around to bake whenever you want.

Thank you to my Bright Light Vegan for continually inspiring me with plant-based meals, snacks and treats like these Chocoluscious Chip Cookies. You inspire me to keep myself healthy on the inside, so I can continue to flourish and thrive in the world!


I’ve been vegan for 15 years, and it turns out it makes a very big impact on the environment to eat fewer animal products, which cause more greenhouse gases than all of transportation combined.

    • Hi Patti! I can’t wait to teach you. My favorite thing in the world is empowering others to explore the beautiful vegetables all around us up close and personal. The smells, the sights, the textures, and oh yeah, the taste! Gazing at the inside of a cut vegetable to see the colors and textures inside reminds me of the simple and succulent miracles available at our fingertips if we make the time for ourselves to explore. I can’t wait to explore things together!!!
