I love string beans! This time of year is a great time to start eating more of them because they are so low in calories and high in fiber. While black beans are so healthy, they have 220 calories compared to string beans which have only 45 calories per cup.

The kids in our family call my Italian dad “Baba” and this recipe is my Italian dad’s claim to fame. My kids love it so much they will look up the recipe on Renata’s Kitchen if I don’t answer their text quickly enough. We have served this dish at so many kids events and they get wolfed down so quickly, you may want to get more than you think.

String beans are very low in sugar coming in at only 2 grams/cup, so they are an excellent way to keep your blood-sugar cravings to a minimum when you realize spring and summer are just around the corner.

At 4 g of fiber per 1 cup serving, green beans will keep your gut full and swollen with green goodness, which will keep you satisfied if you are serving it alongside a more nutrient-dense main course. Enjoy the power of green beans to help you fit into your skinny jeans!

    • Thank you Nancy! It’s amazing how much color all veggies retain when you plop them in an icy cold bath after they cook. They are stunned into their color! I swear even the cauliflower looks more of a heavenly shade of white after stunning them. If you do a few batches of different veggies through the steamer/ice bath, they look so pretty in a giant bowl, all their lovely colors like an artist’s palette.
