Sometimes Da Vegans Get it Right

That's NOT cream, and that's NOT sausage. MMMM, Mmm, vegan gets GOOD!

Vegan “Cream Sauce”

  • 1 cup almond milk

  • 1-2 fresh garlic cloves

  • Drizzle of olive oil (1-3T)

  • hand full of cashews (or almonds, or walnuts, pine nuts or a blend)

  • 1/2 freshly squeezed lemon (or more!)

  • salt & pepper to taste

  • *OPTIONAL SLURP: gigantic hand full of fresh basil, parsley or cilantro

1) Blitz all in blender.  2) Pour over pasta.  3) Done!

( Thin with more lemon, water or almond milk to taste.  Thicken with more nuts. Become a mad scientist and throw a ton of weird herbs/hot stuff/salty stuff in there.)


By now most of you know I have one vegan daughter, one vegetarian daughter, and one omnivore son.

Yes, I am an enabler.  We all have our weaknesses!

But at least my disease allows me to come up with some pretty cool recipes.

This ‘cream sauce’ is so ridiculously easy it doesn’t require cooking. Sometimes I make it because I don’t have time to cook any sauce!

It goes great mixed with a pan of veggies and garlic pan fried with olive oil and chili pepper flakes, tossed with vegan sausage (NOT the soy kind please! “Field Roast” is best and has real foods in it, not just processed GMOs.)   Click HERE for link to Field Roast sausage pic.

If you really wanna get vegan fancy: pan fry garlic, olive oil, crumbled Field Roast Italian vegan sausage, a hand full of sliced cherry tomatoes,  a glass of white wine, a teaspoon of dijon mustard, and a teaspoon of flour all mixed together about 10 minutes or so. Add a hand full of other veggies you like if you wish! (Peas or broccoli taste heavenly.)

Add your “vegan cream sauce” from the blender and combine.

Pour over pasta.

Don’t even tell da meat eaters.  They won’t notice.

My daughter is vegan because she doesn’t want to cause harm to any living creature…except her mother.



What is tolerance? It is the consequence of humanity.  We are all formed of frailty and error; let us pardon reciprocally each other’s folly–that is the first law of nature.
