Renata’s Cheap and Cheerful Curried Cabbage Stir Fry
This dish is a complete vegan meal loaded with fiber, protein and complex carbs. I served it to the rest of the meat eating family with a side of roast chicken (which soaked up the raisin/curry sauce nicely).
You can really use this recipe as a jumping off point for whatever you have in the fridge that has seen better days: cabbage, broccoli, carrots, beans, kale, onions, cauliflower, peas, you name it. If you want to introduce a protein, add a bean of choice (cannellini is great), or if you aren’t vegetarian then some chopped chicken or shrimp would also be lovely.
I have a can of organic coconut milk that I may use tonight on this one, or serve on the side to pour over rice if people want it.
Turmeric is a great spice for reducing inflammation in so many joint related issues, brings down swelling in sinuses, and is a wonderful anti-histamine food.
My friend Heidi and I are making this today as part of our “pooled dinner day”. We are both working from home, so we collect our laptops, join in one kitchen, and pool our veggies and such, going into the kitchen when we have breaks and working on this dish when we can.
At the end of a long day, we will divide, serve to our families, and CONQUER their hunger with a powerful produce-filled dinner!
